Taco fiesta bubble up casserole

Ingredients:

  • 1 lb (450g) ground beef or turkey
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (10 oz) diced tomatoes with green chilies (like Rotel), drained
  • 1 can (8 biscuits) refrigerated biscuit dough (cut into quarters)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • Optional toppings: jalapeños, black olives, cilantro, salsa

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Cook ground beef in a large skillet over medium heat until browned. Drain grease.
  3. Add taco seasoning and water. Stir and simmer for 2–3 minutes until thickened.
  4. Stir in drained diced tomatoes with green chilies. Remove from heat.
  5. Spray a 9×13-inch baking dish with nonstick spray.
  6. Scatter biscuit pieces evenly in the dish.
  7. Layer the meat mixture over the biscuits.
  8. Dollop sour cream over the meat and spread lightly.
  9. Sprinkle both cheeses evenly on top.
  10. Bake uncovered for 25–30 minutes or until biscuits are cooked through and the top is golden and bubbly.
  11. Garnish with green onions and any extra toppings you like.
