Ingredients:
- 1 lb (450g) ground beef or turkey
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (10 oz) diced tomatoes with green chilies (like Rotel), drained
- 1 can (8 biscuits) refrigerated biscuit dough (cut into quarters)
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- Optional toppings: jalapeños, black olives, cilantro, salsa
Instructions:
- Preheat oven to 350°F (175°C).
- Cook ground beef in a large skillet over medium heat until browned. Drain grease.
- Add taco seasoning and water. Stir and simmer for 2–3 minutes until thickened.
- Stir in drained diced tomatoes with green chilies. Remove from heat.
- Spray a 9×13-inch baking dish with nonstick spray.
- Scatter biscuit pieces evenly in the dish.
- Layer the meat mixture over the biscuits.
- Dollop sour cream over the meat and spread lightly.
- Sprinkle both cheeses evenly on top.
- Bake uncovered for 25–30 minutes or until biscuits are cooked through and the top is golden and bubbly.
- Garnish with green onions and any extra toppings you like.
