 Ingredients
¾ cup flour (whole wheat or all-purpose)

1 tsp baking powder

¼ tsp garlic powder

¼ tsp black pepper (or to taste)

¼ tsp salt (or to taste)

¾ cup milk (low-fat or fat-free)

1 tbsp grated Parmesan or cheddar cheese

⅓ cup fat-free mozzarella cheese

¼ cup grated Asiago cheese

3 slices low-point bacon, cooked & chopped

20 slices pepperoni, chopped

2 tsp dried oregano

8 eggs

Optional: Italian seasoning for garnish

 Instructions

  1. Preheat Oven
    Preheat your oven to 375°F (190°C). Lightly grease or spray a muffin tin and set aside.
  2. Mix Wet Ingredients
    In a large bowl, whisk together the milk and eggs until well blended.
  3. Mix Dry Ingredients
    In a separate bowl, combine the flour, baking powder, garlic powder, black pepper, salt, oregano, and optional Italian seasoning.
  4. Combine Wet & Dry
    Gradually stir the dry ingredients into the egg mixture until just combined—don’t overmix!
  5. Add Cheese & Toppings
    Fold in the cheeses, chopped bacon, and pepperoni pieces.
  6. Fill Muffin Tin
    Spoon the batter evenly into the muffin tray. Top with a sprinkle of Italian seasoning if desired.
  7. Bake
    Bake for 20–25 minutes, or until the muffins are golden brown and set in the center.
  8. Cool & Serve
    Let muffins cool slightly before serving. Serve warm with marinara sauce or light ketchup for dipping.
