0-point Almond Joy Cookies

📝 Ingredients:
- 1 cup unsweetened shredded coconut
- 2 ripe bananas (medium size, mashed)
- 1 tsp vanilla extract
- 1 tbsp unsweetened cocoa powder
- 12–14 almonds (1 for each cookie)
🍽 Optional (for flavor boost — check your plan for points):
- A few drops of almond extract
- Pinch of salt
- Sugar-free chocolate chips or drizzle (add points if needed)
👩🍳 Instructions:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mash bananas and mix in shredded coconut, cocoa powder, and vanilla extract (plus optional almond extract/salt).
- Scoop a tablespoon of mixture and form into a cookie shape. Press one almond gently on top of each.
- Bake for 15–18 minutes, until set and edges are slightly golden.
- Let cool completely. Store in an airtight container in the fridge.
