0-point Almond Joy Cookies

📝 Ingredients:

  • 1 cup unsweetened shredded coconut
  • 2 ripe bananas (medium size, mashed)
  • 1 tsp vanilla extract
  • 1 tbsp unsweetened cocoa powder
  • 12–14 almonds (1 for each cookie)

🍽 Optional (for flavor boost — check your plan for points):

  • A few drops of almond extract
  • Pinch of salt
  • Sugar-free chocolate chips or drizzle (add points if needed)

👩‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mash bananas and mix in shredded coconut, cocoa powder, and vanilla extract (plus optional almond extract/salt).
  3. Scoop a tablespoon of mixture and form into a cookie shape. Press one almond gently on top of each.
  4. Bake for 15–18 minutes, until set and edges are slightly golden.
  5. Let cool completely. Store in an airtight container in the fridge.
