High protein coleslaw! Like the high protein potato salad I posted about last week, I also make a high protein coleslaw. I shred cabbage, carrot and lettuce and then I blend Greek yogurt and cottage cheese together to use as the creamy dressing instead of mayo to make a high protein dressing. I add a little lemon juice and mustard too and then salt and pepper.
Served in a sourdough bread roll with roast turkey.
