Purple sweet potato with coconut milk, coconut cream, & chia seeds

Instructions:

Cook 1 diced sweet potato, cook, and set to the side

Cook 2 peeled purple sweet potatoes as whole, cook for 15 mins, then mash and let cool

Add coconut milk, mash potatoes, and coconut cream to Cuisinart on puree mode.

Pour into containers

Add cooked dice purple sweet potatoes

Add chia seeds and stir

Then leave overnight in fridge

You can top fruits ( mango, blueberries, strawberries, etc ) same day before eating
