Banana Pound Cake

Ingredients

  • 3 cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • ½ teaspoon cinnamon
  • 2 ¼ cups brown sugar
  • 1 ½ cups butter, room temperature
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 4-5 ripe bananas, mashed
  • Optional: ½ cup walnuts, chopped

Glaze

  • ½ cup brown sugar
  • ½ cup butter
  • ¼ cup half and half
  • 1 teaspoon vanilla extract

Preparation

  1. Thoroughly grease a 10-inch bundt pan and preheat oven to 350 degrees F.
  2. In a medium-sized bowl, sift together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl combine brown sugar, and butter. Stir until evenly combined, then add eggs one at a time.
  4. Add vanilla and mashed bananas to the wet ingredients and mix until smooth.
  5. Slowly mix the dry ingredients into the wet until just combined. Add walnuts if using.
  6. Transfer batter to the prepared bundt and bake for 60-70 minutes, or until an inserted toothpick comes out clean.
  7. Allow cake to cool for 15 minutes, then invert onto a serving plate.
  8. Glaze: Add all glaze ingredients to a small saucepan over medium heat. Bring to a gentle boil and cook for 2 minutes. Allow glaze to cool for about 5 minutes then drizzle over the cooled cake.
