Keto Egg-free French toast

Ingredients:
- 1 cup almond flour
- 1/4 cup coconut flour
- 2 tbsp ground flaxseeds (or chia seeds)
- 1/4 tsp baking powder
- 1/2 tsp cinnamon (optional)
- 1/4 cup unsweetened almond milk (or any other keto-friendly milk)
- 2 tbsp olive oil or melted butter
- 1 tsp vanilla extract
- 1 tbsp sweetener (like erythritol or monk fruit sweetener, optional)
- 1/4 cup water (if needed to adjust consistency)
- Butter or oil for cooking
Instructions:
- Prepare the Batter:
- In a mixing bowl, combine almond flour, coconut flour, ground flaxseeds, baking powder, and cinnamon (if using).
- Add almond milk, olive oil (or melted butter), vanilla extract, and sweetener (if using). Stir well to combine.
- The batter should be thick but spreadable. If it’s too thick, add a bit of water to reach the desired consistency.
- Make the French Toast:
- Heat a non-stick skillet or griddle over medium heat and add a little butter or oil to grease the pan.
- Spoon the batter into the pan, spreading it slightly to form a pancake shape. Cook for about 2-3 minutes on each side, or until golden brown and cooked through.
- Serve:
- Serve your Keto, Egg-free French Toast with your favorite sugar-free syrup, whipped cream, or fresh berries for an extra treat!
