1 packet taco seasoning (sugar-free or homemade keto-friendly)
1/4 cup water
1 cup shredded cheddar cheese
1/2 cup cream cheese
1/4 cup sour cream
1 cup shredded lettuce
1/2 cup diced tomatoes
1/4 cup sliced black olives (optional)
1 avocado, diced (optional)
1/4 cup chopped green onions
Pork rinds or low-carb tortilla chips for crunch
Instructions:
Preheat Oven: Set your oven to 350°F (175°C).
Cook the Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease.
Season: Add taco seasoning and water to the beef. Stir and simmer for 3-5 minutes until thickened.
Mix Cheeses: Reduce heat to low, add cream cheese and sour cream to the beef. Stir until melted and creamy.
Assemble the Casserole: Pour the beef mixture into a greased baking dish. Sprinkle shredded cheddar cheese evenly on top.
Bake: Place in the oven and bake for 10-15 minutes, until the cheese is melted and bubbly.
Top & Serve: Once out of the oven, top with shredded lettuce, diced tomatoes, black olives, avocado, and green onions. Serve with pork rinds or low-carb tortilla chips for that taco crunch!
