WW Meltaway Brownie Cookies
WW Meltaway Brownie Cookies (2 WW Points Each)
Ingredients:
• ¼ cup unsalted butter, melted
• ½ cup granulated sugar substitute (like Monkfruit or Splenda)
• 1 large egg
• 1 teaspoon vanilla extract
• ⅓ cup unsweetened cocoa powder
• 1 teaspoon baking powder
• ¼ teaspoon salt
• ¾ cup all-purpose flour (or use almond flour for fewer points)
• ¼ cup mini semi-sweet chocolate chips
• Powdered sugar substitute (optional, for dusting)
Instructions:
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a bowl, whisk melted butter and sugar substitute until combined.
3. Add the egg and vanilla extract, mixing until smooth.
4. Sift in cocoa powder, baking powder, and salt. Stir until well incorporated.
5. Gradually fold in the flour until a dough forms. Add mini chocolate chips.
6. Scoop small spoonfuls of dough onto the baking sheet, spacing them 2 inches apart.
7. Bake for 8–10 minutes until the edges are set.
8. Let cookies cool for 5 minutes before transferring to a wire rack.
9. Dust with powdered sugar substitute, if desired.
Makes 16 cookies.
