Keto Mini Cinnamon Sugar Muffins

Ingredients:

  • 2 cups almond flour
  • 1/4 cup erythritol (or preferred sweetener)
  • 2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 large eggs
  • 1/4 cup unsweetened almond milk
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
  • 2 tbsp cinnamon sugar (mix erythritol with cinnamon) for coating

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a mini muffin tin or line with paper liners.
  2. In a large bowl, combine almond flour, erythritol, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together eggs, almond milk, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined.
  5. Scoop the batter into the muffin tin, filling each cup about 3/4 full.
  6. Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
  7. While the muffins are baking, mix together the cinnamon and erythritol in a small bowl.
  8. Once the muffins are done, let them cool for a few minutes, then dip the tops into the cinnamon-sugar mixture to coat.
  9. Let them cool completely and enjoy!
