Keto Mini Cinnamon Sugar Muffins

Ingredients:
- 2 cups almond flour
- 1/4 cup erythritol (or preferred sweetener)
- 2 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 2 large eggs
- 1/4 cup unsweetened almond milk
- 1/4 cup melted butter
- 1 tsp vanilla extract
- 2 tbsp cinnamon sugar (mix erythritol with cinnamon) for coating
Instructions:
- Preheat oven to 350°F (175°C) and grease a mini muffin tin or line with paper liners.
- In a large bowl, combine almond flour, erythritol, baking powder, cinnamon, and salt.
- In another bowl, whisk together eggs, almond milk, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until well combined.
- Scoop the batter into the muffin tin, filling each cup about 3/4 full.
- Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
- While the muffins are baking, mix together the cinnamon and erythritol in a small bowl.
- Once the muffins are done, let them cool for a few minutes, then dip the tops into the cinnamon-sugar mixture to coat.
- Let them cool completely and enjoy!
