Ingredients

  • 2 cups almond flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder (optional, for savory flavor)
  • 1/4 cup cold unsalted butter, cubed (or coconut oil for dairy-free)
  • 2 large eggs
  • 1/3 cup sour cream
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine Dry Ingredients: In a large mixing bowl, whisk together almond flour, baking powder, salt, and garlic powder if using.
  3. Add Butter: Add the cold butter cubes to the dry ingredients. Use a pastry cutter or your hands to combine until the mixture resembles coarse crumbs.
  4. Mix Wet Ingredients: In a separate bowl, whisk together the eggs and sour cream until smooth.
  5. Combine Everything: Pour the wet ingredients into the dry ingredients and mix until a dough forms. If using cheddar cheese, fold it in.
  6. Scoop and Shape: Use a spoon or cookie scoop to drop heaping spoonfuls of dough onto the prepared baking sheet, about 2 inches apart. Flatten slightly if desired for a more traditional biscuit shape.
  7. Bake: Bake for 15–20 minutes, or until the biscuits are golden brown and firm to the touch.
  8. Serve: Let cool for a few minutes, then enjoy warm with butter or your favorite toppings!
