Weight Watchers Caramel Popcorn-5 Points

Ingredients:
- 8 cups air-popped popcorn
- 1/4 cup light corn syrup
- 1/4 cup packed brown sugar
- 2 tbsp light butter
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1/2 tsp vanilla extract
Instructions:
- Prepare the Popcorn:
- Air-pop 8 cups of popcorn and spread it out on a large baking sheet lined with parchment paper. Make sure there are no unpopped kernels.
- Make the Caramel Sauce:
- In a medium saucepan over medium heat, combine the light corn syrup, brown sugar, light butter, and salt. Stir constantly until the mixture comes to a boil.
- Allow the mixture to boil for 2 minutes without stirring.
- Remove the saucepan from heat and stir in the baking soda and vanilla extract. The mixture will bubble up and become frothy.
- Coat the Popcorn:
- Immediately pour the caramel sauce over the popcorn. Use a spatula or large spoon to toss the popcorn and ensure it’s evenly coated with the caramel.
- Bake the Popcorn:
- Preheat your oven to 250°F (120°C).
- Place the baking sheet with the caramel-coated popcorn in the oven. Bake for 45 minutes, stirring every 15 minutes to ensure even coating.
- Cool and Serve:
- Remove the popcorn from the oven and let it cool completely. Break apart any clumps as it cools.
- Once cooled, divide the popcorn into 8 equal servings.
Notes:
- Each serving should be around 5 Weight Watchers points, but be sure to check with your specific plan and ingredients as points can vary.
- Store any leftovers in an airtight container to keep the popcorn fresh and crunchy.
