Lay out a large piece of plastic wrap or parchment paper. Arrange the slices of deli ham in a single layer, slightly overlapping, to form a rectangle.
Spread half of the cream cheese mixture evenly over the ham layer.
Layer the salami, pepperoni, and provolone cheese over the cream cheese mixture.
Sprinkle the sliced black olives, roasted red peppers, and chopped spinach over the provolone cheese.
Carefully roll up the layers tightly into a log, using the plastic wrap or parchment paper to help guide and shape the roll.
Repeat steps 2-6 with the remaining ingredients to make a second roll.
Refrigerate the rolls for at least 1 hour to firm up.
Once chilled, unwrap and slice the rolls into 1/2-inch thick pinwheels.
Serve immediately or store in the refrigerator until ready to serve.
