Instructions:
In a small bowl, whisk together rice vinegar, soy sauce, honey (or sugar), sesame oil, minced garlic, grated ginger, salt, and pepper. Taste the marinade and adjust seasoning if needed.
In a large bowl, combine the thinly sliced cucumbers and red onion.
Pour the marinade over the cucumbers and onion. Toss gently to coat evenly.
Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld together. For best results, let it marinate for at least 1-2 hours, or even overnight.
Before serving, give the salad a good stir. Taste and adjust seasoning if necessary.
Serve chilled, garnished with optional toppings like sesame seeds, chopped cilantro, or green onions.
