Marinated cucumber salad

Ingredients:
- 2 large cucumbers, thinly sliced
- 1/2 red onion, thinly sliced
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon honey or sugar (adjust to taste)
- 1 tablespoon sesame oil
- 1 clove garlic, minced
- 1 teaspoon grated ginger
- Salt and pepper to taste
- Optional toppings: sesame seeds, chopped cilantro or green onions
Instructions:
- In a small bowl, whisk together rice vinegar, soy sauce, honey (or sugar), sesame oil, minced garlic, grated ginger, salt, and pepper. Taste the marinade and adjust seasoning if needed.
- In a large bowl, combine the thinly sliced cucumbers and red onion.
- Pour the marinade over the cucumbers and onion. Toss gently to coat evenly.
- Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld together. For best results, let it marinate for at least 1-2 hours, or even overnight.
- Before serving, give the salad a good stir. Taste and adjust seasoning if necessary.
- Serve chilled, garnished with optional toppings like sesame seeds, chopped cilantro, or green onions.
