Marinated cucumber salad


  • 2 large cucumbers, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or sugar (adjust to taste)
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • Salt and pepper to taste
  • Optional toppings: sesame seeds, chopped cilantro or green onions


  1. In a small bowl, whisk together rice vinegar, soy sauce, honey (or sugar), sesame oil, minced garlic, grated ginger, salt, and pepper. Taste the marinade and adjust seasoning if needed.
  2. In a large bowl, combine the thinly sliced cucumbers and red onion.
  3. Pour the marinade over the cucumbers and onion. Toss gently to coat evenly.
  4. Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld together. For best results, let it marinate for at least 1-2 hours, or even overnight.
  5. Before serving, give the salad a good stir. Taste and adjust seasoning if necessary.
  6. Serve chilled, garnished with optional toppings like sesame seeds, chopped cilantro, or green onions.
