Berry Cheesecake
Weight Watchers Berry Cheesecake is a delicious, creamy dessert that even people not on Weight Watchers can fully enjoy. It’s full of fresh fruit that brightens the dessert and balances out the creamy sweetness you get from cheesecake. By using a light cream cheese and fat free Cool Whip, this dessert saves on unnecessary calories and delights the taste buds at the same time.

Ingredients
- 1 ready made reduced fat graham crust *I buy these in the U.S, you can use the regular ones, just might want to check if it changes points
- ▢8 oz light cream cheese, softened
- ▢1 Tbsp sugar
- ▢1 tsp vanilla
- ▢1 heaping cup fat free cool whip
- ▢1/2 cup fresh blueberries
- ▢1/2 cup fresh strawberries
Instructions
- Use a food processor and puree the blueberries and strawberries together.
- In a bowl, using an electric mixer, cream together the cream cheese, sugar, and vanilla extract until the cream cheese is light and fluffy. Add in the Cool Whip and blend till creamy.
- Use a spatula and place the cream cheese mixture in the graham pie crust.
- Add the pureed fruit to the top (leave 1 tablespoon aside) and mix it into the cream cheese mixture
- Place the remaining 1 tablespoon of pureed fruit on top to finish the swirl effect.
- Let the cheesecake sit in the fridge for at least 90 minutes.
- Cut the cheesecake into 8 equal servings. Enjoy!
