1 1/2 cups crushed graham cracker crumbs (use whole wheat for a healthier option)
1/4 cup unsweetened applesauce
1 tablespoon sugar (or sugar substitute)
For the Cheesecake Filling:
3 packages (8 oz each) fat-free cream cheese, softened
1 cup fat-free Greek yogurt
1 cup sugar substitute (like Stevia or monk fruit), or to taste
3 large eggs
1 tablespoon vanilla extract
Zest of one lemon (optional)
Instructions:
For the Crust:
Preheat Oven: Preheat your oven to 325°F (163°C).
Prepare Crust: In a bowl, combine graham cracker crumbs, unsweetened applesauce, and sugar (or sugar substitute). Mix until the crumbs are moistened.
Press into Pan: Press the crumb mixture into the bottom of a 9-inch springform pan to form the crust. Use the back of a spoon to make it compact.
Bake: Bake the crust in the preheated oven for about 10 minutes. Remove from the oven and let it cool while you prepare the filling.
For the Cheesecake Filling:
Increase Oven Temperature: Increase the oven temperature to 350°F (177°C).
Prepare Filling: In a large bowl, beat the softened fat-free cream cheese until smooth. Add fat-free Greek yogurt, sugar substitute, eggs, vanilla extract, and lemon zest (if using). Beat until well combined and smooth.
Pour Over Crust: Pour the cream cheese mixture over the cooled crust in the springform pan.
Bake: Bake in the preheated oven for about 30-35 minutes or until the center is set.
Cool and Chill: Allow the cheesecake to cool in the pan, then transfer it to the refrigerator to chill for at least 4 hours or overnight.
Serve: Slice and serve the Weight Watchers 0-Point Cheesecake.
Notes:
Sweeteners: Use a sugar substitute suitable for baking to reduce the sugar content.
Greek Yogurt: The fat-free Greek yogurt adds creaminess to the filling without adding points.
Portion Control: Pay attention to portion sizes to stay within your desired point range.
