These easy 3-Ingredient Peanut Butter Blondies are rich, chewy, and packed with peanut butter flavor. With one bowl and a few pantry staples, we can make a simple flourless dessert that is perfect for quick baking days.
Ingredients
1 cup creamy peanut butter
1 cup packed light brown sugar
1 large egg
Instructions
Prepare the oven and pan. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving a little overhang for easier removal, or lightly grease the pan.
Combine the batter. Add the creamy peanut butter, packed brown sugar, and egg to a medium mixing bowl. Stir until the mixture is completely blended, smooth, and uniformly thick.
Fill the baking pan. Spoon the batter into the prepared pan. Use a spatula to press and spread it into an even layer, then level the surface.
Bake the blondies. Place the pan in the preheated oven and bake for 20-25 minutes, or until the edges are lightly golden and the center appears set.
Cool before cutting. Remove the pan from the oven and allow the blondies to cool completely in the pan. Once firm and cool, lift them out using the parchment paper if applicable and cut into 9 squares.
Notes
I recommend checking the blondies near the 20-minute mark. Slightly underbaking is better than overbaking because the center continues to set as the bars cool, giving us a softer, chewier final texture.
