2 points Pizza Muffins

Ingredients:

  • 1 cup self-rising flour (or use all-purpose flour + 1.5 tsp baking powder + pinch salt)
  • 1 cup non-fat plain Greek yogurt
  • 1/2 cup turkey pepperoni, chopped (or chicken sausage, optional)
  • 1/2 cup reduced-fat shredded mozzarella
  • 1/2 cup pizza sauce
  • 1 tsp Italian seasoning
  • Optional: chopped bell peppers, mushrooms, or onions

Instructions:

  1. Preheat oven to 375°F (190°C). Spray a muffin tin with nonstick spray.
  2. In a bowl, mix flour and Greek yogurt to form a dough. Divide into 6 portions and press into muffin cups to form little “pizza crusts.”
  3. Add 1 tsp pizza sauce into each. Top with pepperoni, a sprinkle of cheese, and veggies.
  4. Sprinkle Italian seasoning on top.
  5. Bake for 20–22 minutes or until golden and bubbly.
