1 Point Blueberry muffins

Ingredients

1. 1 1/2 cups rolled oats

2. 1/2 cup unsweetened almond milk

3. 1 large egg

4. 1/4 cup mashed banana

5. 1/4 cup unsweetened applesauce

6. 1 tablespoon honey

7. 1/2 teaspoon vanilla extract

8. 1/4 teaspoon salt

9. 1 cup fresh or frozen blueberries

Instructions

1. Preheat oven to 375°F. Line a 12-cup muffin tin with paper liners.

2. In a bowl, combine oats, almond milk, egg, mashed banana, applesauce, honey, vanilla extract, and salt. Mix well.

3. Gently fold in blueberries.

4. Divide batter evenly among muffin cups.

5. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
