Zesty Lemon Cobbler Bliss
Ingredients:
1/2 cup unsalted butter, melted
1 cup all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
Pinch of salt
1 cup whole milk
1 teaspoon vanilla extract
Zest of 1 lemon
2 cups fresh or frozen blueberries (optional)
1 cup lemon curd
Powdered sugar for dusting
Directions:
Preheat your oven to 350°F (175°C). Pour the melted butter into the bottom of a 9×13-inch baking dish.
In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
Slowly stir in the milk and vanilla extract until smooth. Add the lemon zest to the batter for an extra burst of flavor.
Pour the batter evenly over the melted butter in the baking dish. Do not stir.
If using blueberries, sprinkle them evenly over the batter. Spoon the lemon curd in dollops across the batter, allowing it to sink in naturally.
Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the cobbler is set.
Allow to cool slightly before serving. Dust with powdered sugar if desired.
