zero-waste juice pulp muffins


used the pulp of 1 beet, 2 cucumbers, 1/2 lemon, 3 carrots, & 1 pear.
added 1 cup grain free flour blend from Rories
1 psyllium fiber egg (1 tsp psyllium powder w/ 3 tbsp cold water. mixed until a gooey consistency)
1/3 cup maple syrup
2 tbsp coconut oil
1/4 tsp baking soda
1/4 tsp baking powder
Mix dry ingredients then add in pulp, “egg”, maple syrup and mix well. I used my hands to make sure everything was kneaded together well! Bake in a muffin pan at 350 degrees for 50 minutes
set aside to cool and make chocolate topping
chocolate frosting made on the stove w/ double boiler
1/2 cup cocoa powder
2 tsp coconut oil
1 tbsp maple syrup
Add coconut flakes, pinch of matcha powder, a blackberries, and a slice of fig
Yumm they are sooo delicious!
