Ingredients:
- 1 cup of heavy whipping cream (unsweetened)
- 1 tbsp sugar-free vanilla extract

- 2 tbsp powdered erythritol (or any preferred keto sweetener)
- A pinch of salt
- 1/4 tsp of xanthan gum (for thickening)
Instructions:
- Whip the Cream:
- In a large mixing bowl, whip the heavy whipping cream until it forms soft peaks. You can use an electric mixer or whisk by hand for a good workout!
- Sweeten It Up:
- Add the powdered erythritol and vanilla extract (or cocoa powder, if you’re going for chocolate flavor) to the whipped cream. Continue to whip until fully combined.
- Thicken the Fluff:
- Slowly sprinkle in the xanthan gum while continuing to whip. This will help thicken the fluff, giving it a smooth, light texture.
- Add Salt:
- Add a small pinch of salt to bring out the sweetness.
- Chill (Optional):
- If you prefer a firmer texture, place the fluff in the fridge for about 15-20 minutes.
