Zero-Point Fatbomb Fluff

Ingredients:

  • 1 cup of heavy whipping cream (unsweetened)
  • 1 tbsp sugar-free vanilla extract
  • 2 tbsp unsweetened cocoa powder (optional for chocolate flavor)
  • 2 tbsp powdered erythritol (or any preferred keto sweetener)
  • A pinch of salt
  • 1/4 tsp of xanthan gum (for thickening)

Instructions:

  1. Whip the Cream:
    • In a large mixing bowl, whip the heavy whipping cream until it forms soft peaks. You can use an electric mixer or whisk by hand for a good workout!
  2. Sweeten It Up:
    • Add the powdered erythritol and vanilla extract (or cocoa powder, if you’re going for chocolate flavor) to the whipped cream. Continue to whip until fully combined.
  3. Thicken the Fluff:
    • Slowly sprinkle in the xanthan gum while continuing to whip. This will help thicken the fluff, giving it a smooth, light texture.
  4. Add Salt:
    • Add a small pinch of salt to bring out the sweetness.
  5. Chill (Optional):
    • If you prefer a firmer texture, place the fluff in the fridge for about 15-20 minutes.
