Zero Point Chicken Stir-Fry

Ingredients:

For the Stir-Fry:

  • 1 pound boneless, skinless chicken breasts, thinly sliced
  • 4 cups mixed vegetables (e.g., broccoli, bell peppers, snap peas, carrots), chopped
  • 1 tablespoon soy sauce (low-sodium for a healthier option)
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Crushed red pepper flakes (optional, for heat)
  • Cooking spray

For Serving (Optional):

  • Cauliflower rice or brown rice

Instructions:

  1. In a bowl, marinate the sliced chicken with soy sauce, oyster sauce, sesame oil, fresh ginger, garlic, salt, and pepper. Let it marinate for at least 15-20 minutes.
  2. Heat a large skillet or wok over medium-high heat and coat it with cooking spray.
  3. Add the marinated chicken to the skillet and cook until browned and cooked through. Remove the cooked chicken from the skillet and set it aside.
  4. In the same skillet, add more cooking spray if needed. Add the chopped mixed vegetables and stir-fry until they are crisp-tender.
  5. Return the cooked chicken to the skillet with the vegetables. Toss everything together until well combined and heated through.
  6. If desired, add crushed red pepper flakes for a bit of heat.
  7. Serve the Zero Point Chicken Stir-Fry over cauliflower rice or brown rice if you prefer.
