Prepare the Sauce: In a small bowl, mix together the soy sauce, rice vinegar, and oyster sauce (if using). Set aside.
Cook the Chicken: Spray a large non-stick skillet or wok with cooking spray and heat over medium-high heat. Add the chicken strips and cook until no longer pink, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Cook the Vegetables: In the same skillet, add the onions, garlic, and ginger. Sauté for about 2 minutes until fragrant. Add the bell peppers, carrot, snap peas, and broccoli florets. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp.
Combine Chicken and Vegetables: Return the chicken to the skillet with the vegetables. Pour the sauce over the top and stir well to combine. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
Serve: Drizzle with sesame oil if using and serve hot.
