Zero Point Chicken Salad

Ingredients:

  • 2 cups cooked chicken breast, shredded or diced
  • 1/2 cup fat-free Greek yogurt
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • 1/4 cup diced bell pepper (any color)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Optional: fresh herbs like parsley or dill for garnish

Instructions:

  1. Prepare the Chicken: Cook chicken breasts until fully cooked, then shred or dice into bite-sized pieces.
  2. Mix Dressing: In a large bowl, combine Greek yogurt, lemon juice, Dijon mustard, salt, and pepper. Adjust seasoning to taste.
  3. Combine Ingredients: Add shredded chicken, diced celery, red onion, and bell pepper to the bowl with the dressing. Mix well until everything is evenly coated.
  4. Chill: Cover the bowl and refrigerate for at least 30 minutes to let the flavors meld together.
  5. Serve: Garnish with fresh herbs if desired before serving. This chicken salad can be enjoyed on its own, with lettuce wraps, or in sandwiches.
