WW Summer Salad by the Lake


For the Salad:

  • 4 cups mixed greens (e.g., spinach, arugula, romaine, or your choice)
  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup blueberries
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup toasted sliced almonds or chopped pecans
  • Grilled chicken breast or shrimp (optional, for added protein)

For the Dressing:

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon honey or a sugar substitute
  • Salt and pepper to taste


  1. In a large salad bowl, combine the mixed greens, fresh strawberries, blueberries, cherry tomatoes, red onion, and crumbled feta cheese.
  2. If you’re adding grilled chicken breast or shrimp for extra protein, make sure it’s cooked and sliced or diced, then add it to the salad.
  3. In a small bowl or jar, whisk together the balsamic vinegar, extra-virgin olive oil, honey (or sugar substitute), salt, and pepper. Adjust the sweetness and seasoning to your liking.
  4. Drizzle the dressing over the salad and toss everything together to ensure even coating.
  5. Sprinkle the toasted sliced almonds or chopped pecans over the salad just before serving for added texture and crunch.
