WW Summer Salad by the Lake
Ingredients:
For the Salad:
- 4 cups mixed greens (e.g., spinach, arugula, romaine, or your choice)
- 1 cup fresh strawberries, hulled and sliced
- 1/2 cup blueberries
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup crumbled feta cheese
- 1/4 cup toasted sliced almonds or chopped pecans
- Grilled chicken breast or shrimp (optional, for added protein)
For the Dressing:
- 2 tablespoons balsamic vinegar
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon honey or a sugar substitute
- Salt and pepper to taste
Instructions:
- In a large salad bowl, combine the mixed greens, fresh strawberries, blueberries, cherry tomatoes, red onion, and crumbled feta cheese.
- If you’re adding grilled chicken breast or shrimp for extra protein, make sure it’s cooked and sliced or diced, then add it to the salad.
