WW Peanut Butter M&Ms Cookies

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 1/4 cup natural peanut butter (without added sugar or oil)
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar or a sugar substitute suitable for baking
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Peanut Butter M&M’s (or regular M&M’s)

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter, natural peanut butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Gently fold in the Peanut Butter M&M’s.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
