WW OVEN BAKED FAJITA

Ingredients:

  • 1 pound boneless, skinless chicken breasts, sliced into thin strips
  • 2 bell peppers (red and green), thinly sliced
  • 1 onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons fajita seasoning (store-bought or homemade)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Juice of 1 lime
  • 8 small flour tortillas
  • Toppings: sour cream, shredded cheese, salsa, guacamole, and fresh cilantro

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the chicken strips, sliced bell peppers, and sliced onion.
  3. In a small bowl, mix together the fajita seasoning, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.
  4. Drizzle the olive oil and lime juice over the chicken and vegetable mixture. Sprinkle the seasoning mix over the top, and toss everything to ensure even coating.
  5. Take a large baking sheet or a 9×13-inch baking dish and spread the chicken and vegetable mixture out evenly.
  6. Bake in the preheated oven for about 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
  7. While the fajitas are baking, warm the flour tortillas in the oven or microwave.
  8. Once the fajitas are done, remove them from the oven and serve immediately. You can assemble your fajitas by placing a spoonful of the chicken and vegetable mixture onto a warm tortilla. Add your favorite toppings, such as sour cream, shredded cheese, salsa, guacamole, and fresh cilantro.
  9. Roll up the tortilla, and your oven-baked fajitas are ready to enjoy.
