WW OVEN BAKED FAJITA

WW OVEN BAKED FAJITA
Ingredients:
- 1 pound boneless, skinless chicken breasts, sliced into thin strips
- 2 bell peppers (red and green), thinly sliced
- 1 onion, thinly sliced
- 2 tablespoons olive oil
- 2 tablespoons fajita seasoning (store-bought or homemade)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Juice of 1 lime
- 8 small flour tortillas
- Toppings: sour cream, shredded cheese, salsa, guacamole, and fresh cilantro
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the chicken strips, sliced bell peppers, and sliced onion.
- In a small bowl, mix together the fajita seasoning, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.
- Drizzle the olive oil and lime juice over the chicken and vegetable mixture. Sprinkle the seasoning mix over the top, and toss everything to ensure even coating.
- Take a large baking sheet or a 9×13-inch baking dish and spread the chicken and vegetable mixture out evenly.
- Bake in the preheated oven for about 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
- While the fajitas are baking, warm the flour tortillas in the oven or microwave.
- Once the fajitas are done, remove them from the oven and serve immediately. You can assemble your fajitas by placing a spoonful of the chicken and vegetable mixture onto a warm tortilla. Add your favorite toppings, such as sour cream, shredded cheese, salsa, guacamole, and fresh cilantro.
- Roll up the tortilla, and your oven-baked fajitas are ready to enjoy.
