WW Low Point Burrito Casserole

Ingredients:

  • 1 lb ground turkey or lean ground beef
  • 1 medium onion, diced
  • 1 bell pepper, diced (any color)
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes with green chilies
  • 1 can corn, drained
  • 1 packet taco seasoning (low sodium if preferred)
  • 1 cup cooked brown rice or quinoa
  • 1/2 cup shredded reduced-fat cheese
  • 1/2 cup salsa
  • 1/2 cup plain Greek yogurt (as a sour cream substitute)
  • Salt and pepper, to taste
  • Cooking spray for the pan

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Cook the Meat: Spray a large skillet with cooking spray and heat over medium heat. Add the ground turkey (or beef) and cook until browned. Drain any excess fat.
  3. Add Vegetables: Add the diced onion and bell pepper to the skillet. Cook until they are tender, about 5 minutes.
  4. Combine Ingredients: Stir in the black beans, diced tomatoes, corn, and taco seasoning. Let it simmer for 5 minutes.
  5. Add Rice/Quinoa: Stir in the cooked brown rice or quinoa and mix well.
  6. Assemble Casserole: Spray a baking dish (about 9×13 inches) with cooking spray. Spread the mixture evenly in the dish. Top with shredded cheese and salsa.
  7. Bake: Bake for about 20 minutes, or until the cheese is melted and bubbly.
  8. Serve: Allow to cool slightly before serving. Top each serving with a dollop of Greek yogurt if desired.
