WW Lentil Soup -1 Pt.

Ingredients:

  • 1 cup dry green or brown lentils, rinsed and drained
  • 1 medium onion, finely chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, undrained
  • 6 cups vegetable broth (low-sodium for a healthier option)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions:

  1. In a large pot, combine the lentils, chopped onion, diced carrots, diced celery, minced garlic, diced tomatoes, vegetable broth, ground cumin, ground coriander, smoked paprika, dried thyme, salt, and pepper.
  2. Bring the soup to a boil over medium-high heat, then reduce the heat to low. Cover the pot and let the soup simmer for about 25-30 minutes or until the lentils and vegetables are tender.
  3. Adjust the seasoning with additional salt and pepper if needed.
  4. Ladle the lentil soup into bowls and garnish with chopped fresh parsley.
  5. Serve the Weight Watchers Lentil Soup with lemon wedges on the side for a burst of citrus flavor.
