🍨 WW-Friendly Butter Pecan Protein Ice Cream
Creamy, nutty, and satisfying—this lightened-up version of a classic flavor is high in protein and low in points!
đź“ť Ingredients:
1 cup unsweetened almond milk
1 scoop vanilla protein powder (Whey or plant-based, ~25g protein)
2 tbsp sugar-free vanilla pudding mix (optional, for extra creaminess)
1/4 tsp butter extract
1/4 tsp maple extract (optional but yum!)
1–2 tbsp chopped toasted pecans
1 tbsp monk fruit or stevia (adjust to taste)
Pinch of sea salt
1/4 tsp xanthan gum (optional for smooth texture)
🥄 Directions:
In a blender, mix almond milk, protein powder, sweetener, extracts, salt, and pudding mix (if using). Blend until smooth.
Pour into your Ninja Creami container and freeze for at least 24 hours.
Spin in the Ninja Creami on “Lite Ice Cream” mode.
After first spin, if needed, add 1–2 tbsp more almond milk and respin.
Fold in toasted pecans just before serving!
