Instructions:
For the Crust:
Preheat Oven: Preheat your oven to 325°F (163°C).
Prepare Crust: In a bowl, combine graham cracker crumbs, unsweetened applesauce, sugar, and ground cinnamon (if using). Mix until the crumbs are moistened.
Press into Pan: Press the crumb mixture into the bottom of a 9-inch springform pan. Ensure an even layer.
Bake: Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool while you prepare the filling.
For the Cheesecake Filling:
Increase Oven Temperature: Increase the oven temperature to 350°F (177°C).
Prepare Filling: In a large bowl, beat the softened cream cheese until smooth. Add in the Greek yogurt, sugar, eggs, flour, vanilla extract, lemon zest (if using), and a pinch of salt. Beat until well combined and smooth.
Pour Over Crust: Pour the cream cheese mixture over the cooled crust in the springform pan.
Bake: Bake in the preheated oven for about 40-45 minutes or until the center is set.
Cool and Chill: Allow the cheesecake to cool in the pan, then transfer it to the refrigerator to chill for at least 4 hours or overnight.
