Weight Watchers Tuna Melts

Ingredients:

For the Tuna Salad:

  • 2 cans (5 oz each) tuna in water, drained
  • 1/4 cup light mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 celery stalk, finely chopped
  • 1 tablespoon red onion, finely chopped
  • Salt and pepper to taste

For the Tuna Melts:

  • 4 whole wheat English muffins, split and toasted
  • 1 cup reduced-fat shredded cheddar cheese
  • 2 tomatoes, sliced
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. In a bowl, combine drained tuna, light mayonnaise, Dijon mustard, chopped celery, and chopped red onion. Mix well until all ingredients are evenly combined.
  2. Season the tuna salad with salt and pepper to taste. Adjust the seasoning as needed.
  3. Preheat your oven broiler.
  4. Place the English muffin halves on a baking sheet.
  5. Spoon the tuna salad mixture onto each English muffin half.
  6. Top each with a slice of tomato and a sprinkle of shredded cheddar cheese.
  7. Place the baking sheet under the broiler for 2-3 minutes or until the cheese is melted and bubbly.
  8. Remove from the oven and garnish with chopped fresh parsley if desired.
  9. Serve the Weight Watchers Tuna Melts warm.
