Ingredients (Serves 4)

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 cup pineapple chunks (fresh or canned, no sugar added)
  • 1 bell pepper, sliced (red, yellow, or green)
  • 1 small red onion, sliced
  • 1 zucchini, sliced (optional)
  • ½ cup sugar-free teriyaki sauce
  • 1 tsp garlic powder
  • ½ tsp ground ginger
  • Salt & pepper to taste
  • 1 tbsp sesame seeds (for garnish)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Preheat & Prep: Preheat oven to 375°F (190°C). Cut 4 large pieces of aluminum foil.
  2. Assemble Packets: Place a chicken breast in the center of each foil piece. Season with salt, pepper, garlic powder, and ground ginger.
  3. Add Veggies & Pineapple: Evenly distribute pineapple, bell pepper, onion, and zucchini over the chicken.
  4. Drizzle Teriyaki Sauce: Pour about 2 tablespoons of teriyaki sauce over each chicken breast.
  5. Seal Packets: Fold the foil over the ingredients and seal the edges tightly to form a packet.
  6. Bake: Place the packets on a baking sheet and bake for 25-30 minutes, or until the chicken is fully cooked (internal temp 165°F).
  7. Serve & Enjoy: Carefully open the packets, garnish with sesame seeds and green onions, and serve hot!
