Weight Watchers Taco Casserole

Ingredients:

  • 1 lb lean ground turkey or ground beef (90% lean)
  • 1 small onion, chopped
  • 1 packet taco seasoning (low-sodium if possible)
  • 1 can (10 oz) Rotel tomatoes with green chilies (undrained)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 cup salsa (choose your favorite)
  • 1 cup fat-free Greek yogurt
  • 1 cup reduced-fat shredded cheddar cheese
  • 1 cup crushed tortilla chips (or use baked tortilla chips for a lighter option)
  • Optional toppings: sliced green onions, chopped cilantro, diced tomatoes, shredded lettuce, avocado slices

Instructions:

  1. Preheat the oven to 350°F (175°C). Spray a 9×13-inch casserole dish with non-stick cooking spray.
  2. Cook the ground turkey (or beef) and chopped onion in a large skillet over medium heat until the meat is browned and the onion is softened. Drain any excess fat.
  3. Stir in the taco seasoning and cook for another 2-3 minutes, making sure the meat is well coated.
  4. Add the Rotel tomatoes, black beans, corn, and salsa to the skillet. Stir to combine and cook for 5 minutes, allowing the flavors to meld together.
  5. Remove the skillet from heat and stir in the Greek yogurt. Mix well.
  6. Layer half of the crushed tortilla chips on the bottom of the prepared casserole dish.
  7. Spread the turkey mixture evenly over the chips.
  8. Top with the remaining crushed tortilla chips and then sprinkle the shredded cheese evenly over the top.
  9. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  10. Garnish with optional toppings like green onions, cilantro, tomatoes, shredded lettuce, or avocado slices before serving.

Serving Suggestions:

This casserole pairs well with a simple side salad or steamed vegetables. You can also serve it with additional salsa, Greek yogurt, or guacamole on the side.

This recipe is generally low in points, especially if you use lean turkey and reduced-fat cheese. Depending on your specific plan and serving size, it should be around 6-8 points per serving.
