Weight Watchers Super Easy Pecan Pie Bars

Weight Watchers Super Easy Pecan Pie Bars (Per Serving):
Ingredients:
For the Crust:
- 1 cup all-purpose flour
- 1/4 cup powdered sugar (or a sugar substitute for fewer points)
- 1/2 cup unsalted butter, cold and cut into small pieces
For the Pecan Filling:
- 3/4 cup light corn syrup (or sugar-free syrup for fewer points)
- 1/2 cup granulated sugar (or a sugar substitute for fewer points)
- 2 large eggs
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 1/2 cups chopped pecans
Instructions:
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a medium bowl, combine the flour and powdered sugar. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Press the crust mixture evenly into the bottom of the prepared baking pan.
- Bake the crust in the preheated oven for about 15 minutes or until lightly golden.
- While the crust is baking, prepare the pecan filling. In a mixing bowl, whisk together the corn syrup, sugar, eggs, melted butter, and vanilla extract until well combined.
- Stir in the chopped pecans.
- Pour the pecan filling over the partially baked crust.
- Continue baking for an additional 25-30 minutes or until the pecan filling is set and a toothpick inserted into the center comes out clean.
- Allow the bars to cool completely in the pan on a wire rack.
- Once cooled, use the parchment paper overhang to lift out the bars and cut them into squares.
