Weight Watchers Super Easy Pecan Pie Bars

Weight Watchers Super Easy Pecan Pie Bars (Per Serving):

Ingredients:

For the Crust:

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar (or a sugar substitute for fewer points)
  • 1/2 cup unsalted butter, cold and cut into small pieces

For the Pecan Filling:

  • 3/4 cup light corn syrup (or sugar-free syrup for fewer points)
  • 1/2 cup granulated sugar (or a sugar substitute for fewer points)
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups chopped pecans

Instructions:

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, combine the flour and powdered sugar. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  3. Press the crust mixture evenly into the bottom of the prepared baking pan.
  4. Bake the crust in the preheated oven for about 15 minutes or until lightly golden.
  5. While the crust is baking, prepare the pecan filling. In a mixing bowl, whisk together the corn syrup, sugar, eggs, melted butter, and vanilla extract until well combined.
  6. Stir in the chopped pecans.
  7. Pour the pecan filling over the partially baked crust.
  8. Continue baking for an additional 25-30 minutes or until the pecan filling is set and a toothpick inserted into the center comes out clean.
  9. Allow the bars to cool completely in the pan on a wire rack.
  10. Once cooled, use the parchment paper overhang to lift out the bars and cut them into squares.
