Weight Watchers SEAFOOD SALAD!!!
Ingredients:
For the Salad:
- 1 pound mixed seafood (shrimp, crab, or a combination), cooked and chilled
- 2 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and sliced
- 2 tablespoons fresh parsley, chopped
For the Dressing:
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 clove garlic, minced
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions:
- In a large bowl, combine the mixed seafood, salad greens, cherry tomatoes, cucumber, red onion, olives, and fresh parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, Dijon mustard, salt, and pepper to make the dressing.
- Pour the dressing over the seafood and vegetable mixture. Toss gently until everything is well coated.
- Chill the seafood salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
- Serve the Weight Watchers Seafood Salad on individual plates or in bowls.
