Weight Watchers SEAFOOD SALAD!!!

Ingredients:

For the Salad:

  • 1 pound mixed seafood (shrimp, crab, or a combination), cooked and chilled
  • 2 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 2 tablespoons fresh parsley, chopped

For the Dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the mixed seafood, salad greens, cherry tomatoes, cucumber, red onion, olives, and fresh parsley.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, Dijon mustard, salt, and pepper to make the dressing.
  3. Pour the dressing over the seafood and vegetable mixture. Toss gently until everything is well coated.
  4. Chill the seafood salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
  5. Serve the Weight Watchers Seafood Salad on individual plates or in bowls.
