Weight Watchers Meatloaf

Ingredients 

  • 1 Yellow Onion, finely chopped
  • 1 Red Bell Pepper, finely chopped
  • 3 Garlic Cloves, minced
  • 2 lbs Lean Ground Beef
  • 1 Cup Ketchup, divided
  • ½ Cup Seasoned Bread Crumbs
  • 1 Egg White
  • 2 Tbsp Dijon Mustard
  • 1 Tsp Worcestershire Sauce
  • ¼ Tsp Salt
  • ¼ Tsp Ground Black Pepper

Instructions 

  • Preheat the oven to 400ºF.
  • Line a large rimmed baking sheet with aluminum foil. Set aside.
  • Spray a large skillet with cooking spray. Cook the onion and bell pepper over medium-high heat. Stir occasionally until the veggies have softened, about five minutes.
  • Add the minced garlic and cook, stirring constantly for about 30 seconds. Remove the skillet from the heat and let cool for about 10 minutes.
  • In a large mixing bowl, combine the beef, onion mixture, 1/2 cup of ketchup, the seasoned bread crumbs, egg white, dijon mustard, Worcestershire sauce, salt, and ground pepper.
  • Transfer the mixture to the baking sheet and form into a 5 x 10 inch loaf. Spread the remaining half cup of ketchup over the top of the meatloaf.
  • Bake for 45 to 50 minutes or until the internal temperature reaches 160°F.
  • Transfer the meatloaf to a cutting board and let rest for about 10 minutes then cut into eight equal slices.
