Weight Watchers Lasagna

Ingredients:

  • 9 cooked whole wheat lasagna noodles (or zucchini slices if you prefer low-carb)
  • 1 lb lean ground turkey (or chicken)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 jar (24 oz) marinara sauce (look for a low-sugar option)
  • 1 cup fat-free ricotta cheese
  • 1 ½ cups low-fat mozzarella cheese, shredded
  • 1 egg (or 1/4 cup egg substitute)
  • 1 ½ tsp dried oregano
  • 1 ½ tsp dried basil
  • Salt and pepper to taste
  • 1 cup fresh spinach, chopped (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large pan, cook the ground turkey over medium heat. Add the chopped onion and garlic, sautéing until soft and browned.
  3. Stir in the marinara sauce, oregano, basil, salt, and pepper. Let the sauce simmer for 10 minutes.
  4. In a bowl, mix the ricotta cheese, mozzarella, egg, and spinach (if using). Season with a pinch of salt and pepper.
  5. In a 9×13 baking dish, layer the lasagna. Start with a thin layer of meat sauce at the bottom. Then add a layer of noodles or zucchini, followed by the cheese mixture. Repeat the layers, finishing with a layer of sauce on top.
  6. Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 10 minutes, until the top is bubbly and golden.
  7. Let it rest for 5-10 minutes before serving. Slice and enjoy!
