Weight Watchers Lasagna

Ingredients:
- 9 cooked whole wheat lasagna noodles (or zucchini slices if you prefer low-carb)
- 1 lb lean ground turkey (or chicken)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 jar (24 oz) marinara sauce (look for a low-sugar option)
- 1 cup fat-free ricotta cheese
- 1 ½ cups low-fat mozzarella cheese, shredded
- 1 egg (or 1/4 cup egg substitute)
- 1 ½ tsp dried oregano
- 1 ½ tsp dried basil
- Salt and pepper to taste
- 1 cup fresh spinach, chopped (optional)
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large pan, cook the ground turkey over medium heat. Add the chopped onion and garlic, sautéing until soft and browned.
- Stir in the marinara sauce, oregano, basil, salt, and pepper. Let the sauce simmer for 10 minutes.
- In a bowl, mix the ricotta cheese, mozzarella, egg, and spinach (if using). Season with a pinch of salt and pepper.
- In a 9×13 baking dish, layer the lasagna. Start with a thin layer of meat sauce at the bottom. Then add a layer of noodles or zucchini, followed by the cheese mixture. Repeat the layers, finishing with a layer of sauce on top.
- Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 10 minutes, until the top is bubbly and golden.
- Let it rest for 5-10 minutes before serving. Slice and enjoy!
