Weight Watchers Healthy pepper Soup
1 TBSP olive oil
1# lean gr turkey
3/4 C chopped onion
1 1/2tsp minced garlic
1 red pepper
1 green pepper cut in pieces
1 14.5oz can diced tomatoes (I use 2 cans)
1 15oz can tomato sauce
1 15 oz can beef or chicken broth
2 tsp Italian seasoning
2 C cooked brown rice
Salt and pepper to taste
Brown gr turkey, add onion and cook several minutes then add garlic. Cook another minute.
Add peppers cook another 2-3 minutes then add broth, tomato sauce and diced tomatoes along with Italian seasoning and salt and pepper to taste. Cook 20 min until peppers are tender. Add cooked rice cook 5 min and serve.
