Weight watchers Healthy Instant Pot Chicken Zoodle Soup – 1 point.

Ingredients:
- 2 boneless, skinless chicken breasts (about 12 oz)
- 4 cups low-sodium chicken broth
- 2 medium zucchini, spiralized (zoodles)
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 tsp olive oil
- 1/2 tsp turmeric (optional, for extra warmth)
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper
- 1/2 tsp lemon juice (for freshness)
- Fresh parsley for garnish
Instructions:
- Sauté the Veggies:
- Set the Instant Pot to Sauté mode and add olive oil.
- Sauté onions, carrots, and celery for 2-3 minutes until slightly soft.
- Add garlic, turmeric, thyme, and oregano, stirring for another minute.
- Cook the Chicken:
- Pour in the chicken broth and add the chicken breasts.
- Close the lid, set the valve to Sealing, and pressure cook on High Pressure for 10 minutes.
- After cooking, quick release the pressure.
- Shred the Chicken:
- Remove the chicken and shred it using two forks. Return the shredded chicken to the pot.
- Add Zoodles & Finish:
- Switch the Instant Pot back to Sauté mode and add the zucchini noodles.
- Cook for 2-3 minutes until the zoodles are tender but not mushy.
- Stir in lemon juice, adjust seasoning, and garnish with fresh parsley.
- Serve & Enjoy!
- Ladle into bowls and enjoy a warm, healthy, and comforting soup!
