Weight Watchers Guilt-Free Lasagna:

Ingredients:
For the Meat Sauce:
- 1 pound lean ground turkey or lean ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 1 can (14 ounces) diced tomatoes, drained
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Crushed red pepper flakes (optional, for added heat)
For the Ricotta Filling:
- 1 cup part-skim ricotta cheese
- 1 egg
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 tablespoons fresh basil, chopped (optional)
Other Ingredients:
- 9 lasagna noodles, cooked according to package instructions (look for whole wheat or low-carb options)
- 1 1/2 cups part-skim mozzarella cheese, shredded
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Meat Sauce:
- In a large skillet, cook the ground turkey or beef over medium heat until browned.
- Add the chopped onion and garlic and cook until softened.
- Stir in the crushed tomatoes, diced tomatoes, oregano, basil, salt, pepper, and optional red pepper flakes. Simmer for 15-20 minutes, allowing the flavors to meld.
- Prepare the Ricotta Filling:
- In a bowl, mix together the ricotta cheese, egg, Parmesan cheese, salt, pepper, and chopped basil.
- Assemble the Lasagna:
- In a baking dish, spread a small amount of the meat sauce on the bottom.
- Place three cooked lasagna noodles on top.
- Spread half of the ricotta mixture over the noodles.
- Add a layer of meat sauce.
- Repeat the layers, finishing with a layer of meat sauce on top.
- Sprinkle mozzarella cheese over the final layer.
- Bake:
- Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes.
- Remove the foil and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
- Rest and Serve:
- Let the lasagna rest for about 10 minutes before slicing.
