Weight Watchers Guilt-Free Lasagna:

Ingredients:

For the Meat Sauce:

  • 1 pound lean ground turkey or lean ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (14 ounces) diced tomatoes, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Crushed red pepper flakes (optional, for added heat)

For the Ricotta Filling:

  • 1 cup part-skim ricotta cheese
  • 1 egg
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons fresh basil, chopped (optional)

Other Ingredients:

  • 9 lasagna noodles, cooked according to package instructions (look for whole wheat or low-carb options)
  • 1 1/2 cups part-skim mozzarella cheese, shredded

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Meat Sauce:
    • In a large skillet, cook the ground turkey or beef over medium heat until browned.
    • Add the chopped onion and garlic and cook until softened.
    • Stir in the crushed tomatoes, diced tomatoes, oregano, basil, salt, pepper, and optional red pepper flakes. Simmer for 15-20 minutes, allowing the flavors to meld.
  3. Prepare the Ricotta Filling:
    • In a bowl, mix together the ricotta cheese, egg, Parmesan cheese, salt, pepper, and chopped basil.
  4. Assemble the Lasagna:
    • In a baking dish, spread a small amount of the meat sauce on the bottom.
    • Place three cooked lasagna noodles on top.
    • Spread half of the ricotta mixture over the noodles.
    • Add a layer of meat sauce.
    • Repeat the layers, finishing with a layer of meat sauce on top.
    • Sprinkle mozzarella cheese over the final layer.
  5. Bake:
    • Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes.
    • Remove the foil and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
  6. Rest and Serve:
    • Let the lasagna rest for about 10 minutes before slicing.
