Weight Watchers Glory Low Point Baked Oatmeal with Pineapple “Frosting”
Ingredients:
For the Baked Oatmeal:
- 2 cups old-fashioned oats
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 cups unsweetened almond milk
- 1/4 cup unsweetened applesauce
- 1/4 cup pure maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup crushed pineapple (drained)
- 1/4 cup chopped walnuts (optional)
For the Pineapple “Frosting”:
- 1/2 cup nonfat Greek yogurt
- 1/4 cup crushed pineapple (drained)
- 1 tablespoon honey or maple syrup (optional, for sweetness)
Instructions:
- Preheat the oven: to 350°F (175°C). Grease an 8×8 inch baking dish or line it with parchment paper.
- Combine dry ingredients: In a large bowl, mix together the oats, baking powder, cinnamon, and salt.
- Combine wet ingredients: In another bowl, whisk together the almond milk, applesauce, maple syrup, and vanilla extract.
- Mix together: Add the wet ingredients to the dry ingredients and stir until well combined. Fold in the crushed pineapple and chopped walnuts if using.
- Bake: Pour the mixture into the prepared baking dish and spread it out evenly. Bake for 35-40 minutes, or until the top is golden brown and the oatmeal is set.
- Prepare the Pineapple “Frosting”: In a small bowl, mix together the Greek yogurt, crushed pineapple, and honey or maple syrup until smooth.
- Serve: Let the baked oatmeal cool slightly before slicing. Serve with a dollop of the Pineapple “Frosting” on top.
