Weight Watchers Glory Baked Oatmeal with Pineapple

Ingredients:

  • 2 cups old-fashioned oats
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup chopped walnuts or pecans
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups unsweetened almond milk or any milk of choice
  • 1/2 cup unsweetened applesauce
  • 1/4 cup pure maple syrup or a sugar-free sweetener (adjust for Weight Watchers points)
  • 1 teaspoon vanilla extract
  • 1 cup fresh pineapple, diced

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a baking dish (approximately 8×8 inches).
  2. In a large bowl, combine oats, shredded coconut, chopped nuts, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together almond milk, applesauce, maple syrup, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until well combined.
  5. Gently fold in the diced pineapple.
  6. Pour the oatmeal mixture into the prepared baking dish.
  7. Bake in the preheated oven for 30-35 minutes or until the top is golden brown and the oatmeal is set.
  8. Allow the baked oatmeal to cool for a few minutes before slicing and serving.
