Weight Watchers-Friendly Vegetable Bake
Ingredients:
- 1 medium zucchini, sliced
- 1 medium yellow squash, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 1/2 cup reduced-fat mozzarella cheese, shredded
- 1/4 cup grated Parmesan cheese
- Fresh basil or parsley for garnish (optional)
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the zucchini, yellow squash, bell peppers, red onion, cherry tomatoes, mushrooms, and garlic.
- Drizzle the vegetables with olive oil and sprinkle with oregano, basil, thyme, salt, and pepper. Toss to coat the vegetables evenly.
- Transfer the vegetable mixture to a large baking dish or casserole dish. Spread them out evenly.
- Bake in the preheated oven for about 20-25 minutes, or until the vegetables are tender.
- Remove the dish from the oven and sprinkle the mozzarella and Parmesan cheese evenly over the top.
- Return the dish to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool slightly. Garnish with fresh basil or parsley, if desired.
Serving Suggestion: Serve this vegetable bake as a main dish with a side salad or as a side dish to a lean protein like grilled chicken or fish.
