Weight Watchers-Friendly Clodhopper Candy

Ingredients

  • 1 cup low-sugar granola or puffed rice cereal
  • 1/2 cup crushed pretzels (use low-sodium or whole wheat)
  • 1/4 cup chopped nuts (e.g., almonds or peanuts)
  • 1/2 cup sugar-free chocolate chips
  • 1/4 cup peanut butter powder (mixed with water into a paste)
  • 1/4 cup sugar-free or light caramel syrup

Instructions

  1. Prep the Mix:
    In a large bowl, combine granola, pretzels, and nuts. Toss well to ensure even distribution.
  2. Melt the Chocolate:
    In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring until smooth.
  3. Combine Ingredients:
    Pour the melted chocolate over the granola mix. Stir until everything is coated. Add the prepared peanut butter paste and caramel syrup, mixing thoroughly.
  4. Shape the Candies:
    Line a baking sheet with parchment paper. Drop spoonfuls of the mixture onto the sheet to form clusters.
  5. Set and Chill:
    Place the tray in the refrigerator for 30 minutes or until the candies are firm.
  6. Serve and Enjoy:
    Store in an airtight container in the fridge for up to a week. Perfect for guilt-free snacking!
