WEIGHT WATCHERS EGG ROLL IN A BOWL

Ingredients:

  • 1 lb lean ground turkey or chicken
  • 1 tablespoon sesame oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon hoisin sauce (check for low-sugar or sugar-free options)
  • 1 teaspoon Sriracha or chili sauce (adjust to taste)
  • 1 bag coleslaw mix (shredded cabbage and carrots)
  • 2 green onions, chopped
  • Sesame seeds for garnish (optional)
  • Fresh cilantro for garnish (optional)

Instructions:

  1. Cook Ground Meat:
    • In a large skillet or wok, heat sesame oil over medium-high heat. Add the ground turkey or chicken and cook until browned. Break it apart with a spatula as it cooks.
  2. Add Aromatics:
    • Add chopped onion, minced garlic, and grated ginger to the skillet. Cook for a few minutes until the vegetables are softened.
  3. Sauce Mixture:
    • In a small bowl, mix together soy sauce, rice vinegar, hoisin sauce, and Sriracha. Pour the sauce over the meat and vegetables in the skillet.
  4. Add Coleslaw Mix:
    • Add the coleslaw mix to the skillet. Stir everything together, ensuring that the sauce is evenly distributed.
  5. Cook Until Vegetables are Tender:
    • Continue to cook the mixture for 5-7 minutes or until the cabbage and carrots are tender-crisp. Stir occasionally.
  6. Adjust Seasoning:
    • Taste and adjust the seasoning if needed. You can add more soy sauce or Sriracha for extra flavor.
  7. Garnish and Serve:
    • Garnish the dish with chopped green onions, sesame seeds, and fresh cilantro if desired.
  8. Serve Warm:
