WEIGHT WATCHERS EGG ROLL IN A BOWL
Ingredients:
- 1 lb lean ground turkey or chicken
- 1 tablespoon sesame oil
- 1 onion, finely chopped
- 3 cloves garlic, minced

- 1/4 cup low-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon hoisin sauce (check for low-sugar or sugar-free options)
- 1 teaspoon Sriracha or chili sauce (adjust to taste)
- 1 bag coleslaw mix (shredded cabbage and carrots)
- 2 green onions, chopped
- Sesame seeds for garnish (optional)
- Fresh cilantro for garnish (optional)
Instructions:
- Cook Ground Meat:
- In a large skillet or wok, heat sesame oil over medium-high heat. Add the ground turkey or chicken and cook until browned. Break it apart with a spatula as it cooks.
- Add Aromatics:
- Add chopped onion, minced garlic, and grated ginger to the skillet. Cook for a few minutes until the vegetables are softened.
- Sauce Mixture:
- In a small bowl, mix together soy sauce, rice vinegar, hoisin sauce, and Sriracha. Pour the sauce over the meat and vegetables in the skillet.
- Add Coleslaw Mix:
- Add the coleslaw mix to the skillet. Stir everything together, ensuring that the sauce is evenly distributed.
- Cook Until Vegetables are Tender:
- Continue to cook the mixture for 5-7 minutes or until the cabbage and carrots are tender-crisp. Stir occasionally.

- Garnish and Serve:
