Weight Watchers Creamy Potato & Hamburger Soup
Ingredients:
1 lb lean ground beef (90% lean or higher)
1 onion, finely chopped
3 cloves garlic, minced
4 cups potatoes, peeled and diced
2 carrots, peeled and sliced
2 celery stalks, chopped
4 cups low-sodium beef broth
1 cup water
1 cup fat-free milk
1 cup frozen corn kernels
1 cup frozen peas
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
1/2 cup fat-free Greek yogurt (optional, for creaminess)
Instructions:
In a large pot over medium heat, brown the lean ground beef until fully cooked. Drain excess fat if necessary.
Add chopped onions and minced garlic to the pot. Sauté until the onions are translucent.
Stir in diced potatoes, sliced carrots, and chopped celery.
Pour in low-sodium beef broth and water. Bring the mixture to a boil and then reduce the heat to a simmer. Cook until the vegetables are tender.
Add fat-free milk, frozen corn, frozen peas, dried thyme, and dried rosemary. Season with salt and pepper to taste.
Simmer the soup for an additional 10-15 minutes until all the vegetables are fully cooked.
If desired, stir in fat-free Greek yogurt for added creaminess.
Taste and adjust seasonings as needed.
