Weight Watchers Cinnamon Roll Casserole:

Ingredients:

  • 1 can reduced-fat cinnamon rolls (8 rolls)
  • 2 large eggs

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. Prepare the Cinnamon Swirl:
    • In a small bowl, mix together brown sugar substitute, ground cinnamon, and melted light butter. Set aside.
  3. Prepare the Casserole:
    • Cut each cinnamon roll into quarters.
    • In a separate bowl, whisk together eggs, almond milk, and vanilla extract.
    • Add the cinnamon roll pieces to the egg mixture, coating them evenly.
  4. Assemble the Casserole:
    • Layer half of the coated cinnamon roll pieces in the prepared baking dish.
    • Drizzle half of the cinnamon swirl mixture over the cinnamon roll layer.
    • Repeat with the remaining cinnamon roll pieces and cinnamon swirl mixture.
  5. Bake:
    • Bake in the preheated oven for 25-30 minutes or until the casserole is golden brown and cooked through.
  6. Prepare the Icing (optional):
    • In a bowl, whisk together powdered sugar substitute, softened fat-free cream cheese, and almond milk until smooth.
  7. Serve:
    • Drizzle the optional icing over the warm casserole.
    • Let it cool slightly before serving.
